Green Pumpkin Soup
Finely chop a medium onion, saute in canola oil or olive oil. This works best in a tall pan or pot.
Add:
□ 1 can spinach with packing water
□ 1 15 oz can pumpkin or 1 29 oz can pumpkin or 2 15 oz cans
□ 1 can chicken broth
□ 1 10 3/4 oz can condensed tomato soup
□ 1 lb Silken Tofu
Season lightly with:
□ Salt
□ Hot Sauce
□ Sesame Oil
□ Worchestershire sauce
□ Aromatic bitters
□ Ginger
□ Nutmeg
Blend with hand blender (can be messy!)
