Green Pumpkin Soup


Finely chop a medium onion, saute in canola oil or olive oil. This works best in a tall pan or pot.


Add:

 

       1 can spinach with packing water

       1 15 oz can pumpkin or 1 29 oz can pumpkin or 2 15 oz cans

       1 can chicken broth

       1 10 3/4 oz can condensed tomato soup

       1 lb Silken Tofu


Season lightly with:

 

       Salt

       Hot Sauce

       Sesame Oil

       Worchestershire sauce

       Aromatic bitters

       Ginger

       Nutmeg



Blend with hand blender (can be messy!)
