Black Mango
Prepare Veggies:
- Chop a medium onion
- Cube ½ red pepper and ½ green pepper
- Cube a mango
- Grate a ½ inch cube of fresh ginger
Cook:
- Saute the onion in canola oil
- Add the peppers and continue to saute
- Add the ginger and mango
- Pour in some lemon juice
- Season with salt and cayenne pepper to taste
- (Add some parsely)
- Add a can of seasoned black beans (with liquid)
